A counter run by the Tsukiji uni wholesaler Shutoku Co., where sea urchin is laid out by origin to compare the contours of each flavor. Minimal cooking, a single light, ingredients shucked to order — carried to the mouth quietly, like research.

Hokkaido, Tōhoku, North America, Chile. The difference of each sea reaches the tongue directly — three to four uni laid on a single dark stone. The dish at the heart of the counter.
